Default What's your favorite dessert?

My family is plagued by high cholesterol, so we've been trying to eat healthy. Whole wheat, whole grain, multi-grain, twigs and leaves, etc. We've been eating fresh pears as dessert lately; no real complaints here, they're quite juicy and delicious. But one or two nights a month we've decided to declare Gooey Dessert Nights and throw healthy diet to the winds.

I have a feeling this "once or twice a month" idea won't last very long once the warmer weather arrives, because we all LOVE ice cream.

What are some of your favorite desserts? Feel free to include recipes!

Any kind of rhubarb workes for me. I like cobblers. Of course, the stuff doesn't grow down where I am although I've tried several times to grow it.

(By the way, since I've been eating a good bowl of oatmeal every morning my cholestrol has dropped from 230 to 175. Those triglycerides are another story.)

My grandfather grows rhubarb in his backyard; usually not much of it, but one year he had a bumper crop and we had to come over and make rhubarb preserves
I've always eaten oatmeal several times a week, with raisins and brown sugar. I tried some steel-cut Irish oatmeal a few weeks ago and it was quite good! Except the recipe was made with heavy cream. Oh well.

....Yes.

Problem is I'm a diabetic. Sassy makes a great sugar free apple pie that I dearly love.
Ice cream is a toughy. I love it. However, I also found something called Frace` it's a soft serve, and quite good, no sugar, no fat lactose free, and Ten calories an ounce. it's not bad. it AIN"T ice cream but... it works in a pinch.

Frozen Mousse Brownie Sandwiches

Ingredients:
1 pkg No Pudge! Fudge Brownie Mix
2 cups cold fat free milk
2 pkgs sugar free instant vanilla pudding (1 ounce each)
3 tbsp vanilla or white sugar free chocolate chips, melted and cooled
1/2 cup reduced fat whipped topping

1. Line the bottom and sides of two 9 x 13 x 2 baking pans with parchment paper. Coat the paper with non stick spray



2. Prepare the brownies according to package directions. Divide the batter evenly between the 2 pans.



3. Bake at 350 degrees for 15 to 18 minutes or until edges pull away from the sides of the pan and a toothpick comes out clean. Cool on wire racks.



4. In a bowl whisk together milk and pudding mixes for two minutes. Stir a small amount of the pudding into the melted chips, then return all to the pudding. Fold in whip topping.



5. Cover 2 large cutting boards with plastic wrap (don't use wax paper - I learned the hard way) Invert one pan of brownies onto each prepared board. Gently peel off parchment. Spread mousse to within 1/2 inch of edges of the first brownie. Carefully invert second brownie layer on top of mousse.



6. Cover and freeze for about 4 hours or until filling is firm. Remove from freezer 10 minutes before cutting into sandwiches. Individually wrap left over sandwiches and store in freezer.



No Pudge! Note: For a thicker brownie use 1 box of mix and two 8 x 8 baking pans. For a tasty option we tried softening fat-free frozen yogurt. Remove from the freezer and let soften. Spread on the prepared brownie, freeze and enjoy. Delicious AND Fat Free!

Made from real Rubber Chickens and real whip cream ( or Ice cream)
PLEASE NOTE: Use All Natural Flavors / Range Feed Chickens!
It will be a treat that the kids will never forget!
