Default Food Allergies

About a year ago I was diagnosed with having gluten allergies. This is a protein found in wheat, barley, oats, and rye. It affects about 1 in 133 Americans. If I eat anything with gluten it affects my small intestine and can lead to all sorts of health problems, mainly malnourishment. I have altered my died completely. No more burgers, pasta, pizza, cookies, bread, doughnuts, and everything else that I loved to eat. It has been hard but I have found substitutes to help out that are gluten free and taste ok.

Food allergies are very serious; especially people that are allergic to peanuts. If anyone ever thinks they may have a food allergy, I strongly suggest going to a doctor and getting tested. If anyone wants to learn more about gluten allergies, they can go to www.celiac.org for more info.

Default

My wife and I have a good friend with celiacs and she lived with us when she was going through the "change" in diet. She has been living glutten free for about 4 years now and is perfectly happy. She pretty much makes all her own food and I think is qorking on a cook book for people who can't have gluten.
